Honestly I'm not sure that any of the other examples are mirror coincidences or just happenstance. Yes, you were thinking about the drink but was your mind so charged that it caused your mom to buy it? In that instance it could be that your energies were so synced that she subconsciously read your mind but that wouldn't count as a mirror coincidence either.
