The one book I've read three times is Hermann Hesse's Narcissus and Goldmund. Once assigned in high school in '83 or '84, once sometime I can't pin down and the last time in 2009 when I was unhappy at home. Now that I am a completely different person than I was at any of those times, I think another read is approaching.
